Zucchini Bread

3 eggs
1 c. vegetable oil
2 ½ c. sugar
2 c. zucchini (shredded)
1 tsp. vanilla
3 c. flour
2 tsp. cinnamon
1 ½ tsp baking powder
1 tsp salt
1 (20oz) can crushed pineapple (drained well)

Beat eggs. Add oil and sugar. Beat well. Add remaining ingredients and stir. Grease and flour 3 loaf pans. Fill 2/3 full. Bake for 1 hour at 350°.
