Sausage Gravy

1-2 lb of Sausage (Tennessee Pride)
2- 3 cups of flour (really depends on how much grease there is on how much you add)
Milk 3- 4 cups approx

Brown sausage and make it as crumbly as you can
Sift some flour on the meat and stir.  Add enough flour that all the meat is coated some.  Add milk, stir.  Repeat until you get it to your favorite consistency. 

Freeze in airtight container & reheat in microwave.  Serve over prepared biscuits.

Yellow Cake Surprise

1 box white or yellow cake mix
1 can fruit cocktail

Follow directions on box. When it is ready to pour in 9x13 inch pan to bake, drain a can of fruit cocktail and just stir the fruit in the cake batter and bake as usual. Do not use the juice, the cake is very moist and does not need any icing unless you so desire.

Apple* Bread

1 1/2 cups flour
1 tsp. ground cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cloves

1 cup sugar
1 cup finely shredded apples*
1/4 cup cooking oil
1 egg
1/4 tsp lemon zest

+may add 1/2 cup chopped nuts

Preheat oven to 350. Grease 8X4X2 loaf pan or two minis. (Makes good muffins too, bake 20-22 minutes, if too dry add 1Tbsp of H2O.)
In medium bowl, mix first 7 ingredients. Then add the rest, but do not overmix. Pour into pans, and bake at 350 degrees for 55-60 minutes (45 for minis) until toothpick comes out clean.

*You can substitute sweet potatoes or zucchini for apples

Cheese and Sausage Pie

1 (8 oz.) can crescent rolls
2 cups monterey jack cheese (cubed or shredded)
12 oz. smoked kielbasa sausage, cut into 1/4" slices
1/8 tsp salt
1/8 tsp pepper
1 Tbsp parmesan cheese
2 eggs, slightly beaten

Heat oven to 325. Use 5 crescent rolls and press into a 9 inch pie pan. Combine the remaining ingredients in a large bowl. Pour into the crust. Roll out each remaining roll so the longest side is 9 inches. Cut into 1/2" strips. Make a lattice top. Flute edges. Place pie in freezer until frozen solid. Cover with aluminum foil and slip into a ziplock bag for added protection.

To serve: Thaw slightly. Bake 60-70 minutes at 325. Cool for 10 minutes.

Red Hot Applesauce

You can use any variety of apple, or a combination.  I like Jonagolds (cross between Jonathans and Golden Delicious) or Jonathans.

Peel and quarter apples.  Remove the core and stem.  Put in a sauce pan and add water (about 1/3 to ½ way up the apples).  Boil until the apples are soft.  Mash with a hand masher or beat with a mixer.  Add some red hot candies to taste.  Stir until dissolved.

Flank Steak Roll-Ups


flank steak
fresh spinach
fresh sliced mushrooms
diced onion
minced garlic
feta cheese
crumbled bacon


Pound out flank steak to tenderize then put ingredients on steak and roll up. Use toothpicks to keep steak in place. Grill and enjoy.

Jewish Apple Cake

5 apples, peeled and sliced
2 teaspoons cinamon
2 1/2 cups sugar
1 cup vegetable oil
7 Tablespoons orange juice
2 1/2 teaspoons vanilla
4 eggs
3 cups flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt

Combine apples and cinamon and set aside.
Mix sugar, oil, orange juice, vanilla, and eggs.
Sift together flour, baking powder, and salt. Mix.
Grease a tube pan well and sprinkle with flour.
Alternate layers of batter and apples. Finish with layer of apples.
Bake at 350 for 1 1/2 hours or until done.

Glazed Apple Cookies

1/2 c. butter
1 c. brown sugar
1 egg
2 c. flour
1 t. baking soda
1/2 t. salt
1 t. cinnamon, ground
1/2 t. cloves, ground
1/4 t. nutmeg, ground
2 c. apples, peeled and diced
1/4 c. milk
1 1/2 c. powdered sugar
1 T. butter
1/2 t. vanilla
2 1/2 T. milk

Beat butter and sugar. Add egg and blend. In another bowl stir flour, baking soda, salt, and spices. Mix half of the dry ingredients into the creamed mixture. Stir in apple* then stir in remaining dry ingredients and milk. Mix well.
Drop onto lightly greased baking sheet. Bake for 10-12 minutes at 400 degrees. Remove to rack and spread with glaze.
For glaze: combine powdered sugar, butter, vanilla and enough milk to spread easily. Beat until smooth and spread on warm cookies.

*OPTIONAL: Add 1 c. chopped walnuts or/and 1 c. raisins when adding the apples.

Chicken Alfredo Pizza

Alfredo Sauce
1/4 c. butter
1 c. heavy cream
2/3 c. Parmesan, grated
salt and pepper

Pizza
2 pizza crusts - 12 inch
1 pkg. frozen spinach, thaw and drain well
6 green onions, sliced 
2 boneless, skinless chicken breast, cooked and shredded
1 lb bacon, cooked and crumbled
1 c. mozzarella cheese, shredded

Heat oven to 400 degrees. Melt butter in saucepan. Add cream and bring to a boil. Simmer for 5 minutes while stirring. Add Parmesan, salt and pepper.
Roll out pizza to form crusts. Par bake the crusts for 5 minutes.  Allow to cool completely. Cover a small cake cardboard rounds with Press and Seal wrap. Transfer crusts onto cardboard rounds.
Spread sauce evenly. Add spinach, onions, chicken, and bacon. Sprinkle cheese on top. Cover with additional Press and Seal wrap and freeze.

Makes 2 - 12 inch round pizzas

To serve: Place frozen pizza on baking pan.  Bake at 400 degrees for 15 minutes.

Vegetable & Ham Strata

1/2 lb fresh asparagus spears, trimmed & cut into 1" pieces
1/2 cup (3 oz) ham, chopped
1/4 cup red bell pepper, chopped
2 sourdough English muffins, split in half
1 cup shredded Cojack cheese, divided
4 eggs, lightly beaten
1 cup milk
1/2 tsp dry mustard
1/2 tsp salt
1/4 tsp ground black pepper

Cook asparagus in saucepan, covered, in a small amount of boiling water 6 - 8 minutes, or until crisp-tender; drain.  In bottom of 8 x 8 baking pan, place English muffin halves, split sides up.  Top with 1/2 cup of cheese, asparagus, ham & bell pepper.  Whisk eggs, milk, dry mustard, salt & pepper until well blended.  Pour egg mixture over muffins & cheese.  Place remaining cheese in a quart-sized ziploc bag.  Cover pan, label, & freeze, attaching bag of remaining cheese to the pan. 

To serve:
Thaw completely in refrigerator.  Preheat oven to 375 degrees.  Bake, unocovered, 35 minutes.  Top with remaining cheese and bake 5 - 7 minutes longer, or  just until cheese is melted.  Cut strata into squares.  If desired, serve with prepared packaged Hollandaise sauce.

Rosemary Roasted Pork Loin

2 lb pork tenderloin
2 clvoes garlic
2 sprigs fresh rosemary, cut into 1 " pieces
2 tsp salt
1 tsp black pepper
1 cup chicken broth

Cut each garlic clove into 4 slices.  Use a sharp knife to make 8 small slits in tenderloin.  Push one slice of garlic & one piece of rosemary into each slit.  Sprinkle tenderloin with salt & pepper.  Place tenderloin in a gallon-size freezer bag.  Pour 1 cup chicken broth into a quart-sized freezer bag.  Place both bags into a second gallon-sized bag.  Label & freeze. 

To serve: 
Defrost completely in refrigerator.  Preheat 2 Tbsp olive oil in a skillet over medium heat.  Brown tenderloin on all sides.  Transfer to a baking dish sprayed with cooking spray.  Pour broth into dish.  Bake, covered, for 30 to 45 minutes, or until desired doneness (145 to 155 degrees).  Let stand for 10 minutes before slicing.  If desired, drizzle with pan juices.

Freezer Muffin Pizzas

12 English muffin halves
1 lb sausage
1/2 large onion, diced
1/2 tsp salt
1/2 tsp pepper
3 oz Cheese Whiz
7 oz pizza sauce
1/4 cup minced fresh parsley
1/4 cup parmesan cheese

Brown sausage & onion in large skillet.  Drain.  Season with salt & pepper.  Spread 2 tsp. cheese spread & 2 tsp. pizza sauce on each muffin.  Spoon sausage mixture onto pizza sauce.  Sprinkle with parsley & parmesan cheese.  Flash freeze on baking sheet.

To serve: 
Bake from frozen approximately 20 - 30 minutes at 350 degrees, or until bubbly.
