2 cups frozen corn
2 Tbsp green chiles
2 Tbsp lime juice
2 Tbsp roasted red peppers, diced
3 Tbsp unsalted butter
2 Tbsp fresh cilantro, minced
Combine all ingredients in a ziploc bag. Remove air & seal. Freeze.
Empty frozen contents into a 2 qt microwave casserole or bowl. Cover & microwave on high 10 -13 minutes, stirring halfway through cooking time, until tender. Stir, cover & allow to stand about 5 minutes before serving. Season with salt, if desired.
