MaMa's Easy Chinese Grilled Chicken

Serves 4
1.5 to 2 pounds of boneless, skinless chicken thighs, fat trimmed
(also great for other cuts of chicken and pork chops too!)
Marinade
   1 to 1.5 cups of soy sauce
   0.5 cup of Mirin or Rice Wine for cooking (NOT rice wine vinegar)
   1/2 cup of rough chopped green onion (~2-3 stalks)
   2 to 3 Tablespoons minced garlic
              OR 3-4 cloves rough chopped/smashed fresh garlic
   1/4 cup granulated sugar
   1 to 2 teaspoons ground black pepper
   (Optional) 1 teaspoon of Sesame Oil (use sparingly-a little goes a long way)
   (Optional) 1 Tablespoon of Toasted Sesame Seeds

Mix marinade ingredients. The amount of the marinade ingredients can
be adjusted
to your taste (but using more sesame oil is not recommended).
Marinate chicken for at least 2 hours up to overnight. Optional:
Before marinating,
pierce the chicken with a fork to allow more flavor.
Cook on greased grill turning once. Cook to safe temperature.
For best flavor, grilling is preferred, but chicken can also be baked in oven.
