Taco Stew
Ingredients:
1 lb ground sirloin, browned & rinsed
1 can pinto beans, drained
1 can ranch style beans, drained
1 can diced tomatoes with green chiles (undrained)
1 can diced tomatoes (undrained)
1 1/2 cups frozen corn
1 packet taco seasoning
1 packet ranch dressing mix
salt/pepper to taste (I do not add salt)
Place all ingredients in a gallon size ziploc bag. Remove air, label & freeze.
To prepare: Thaw & pour into a crockpot. Add 1/2 cup water or beef broth (this instruction is not in the original recipe, but I assume we may need to add some liquid after freezing). Cook on low 6 hours (or on high 3 - 4 hours). Serve with sour cream & Fritos.
