No Bake Granola Bars

2 c. Kellogg's Smart Start (or other flaked cereal)
2 c. quick-cooking oats
1/2 c. coarsely chopped peanuts
1/2 c. packed brown sugar
1/2 c light corn syrup
1/2 c. plus 2 Tbsp creamy peanut butter
2 Tbsp canola oil
1 tsp vanilla extract

Lightly butter a 9 inch square pan. In a large bowl, mix cereal, oats, raisins, and peanuts. In a small sauce pan, stir brown sugar and corn syrup over low heat until mixture starts to boil.  Remove from heat and stir in peanut butter, oil, and vanilla. Pour peanut butter mixture over cereal; stir until combined. Press mixture into pan firmly so batter spreads evenly.  Cool.  Cut into 16 bars.  Wrap bars individually in freezer paper and place in freezer bag.  Freeze for up to 3 months.
