Mom's Meatballs

This fabulous and versatile meatball recipe will be a staple in your freezer.  Throw them into a slow cooker with some marinara sauce for tasty and quick meatball sandwiches.  Or add to your tomato sauce for a hearty spaghetti dish. But my favorite way to enjoy these meatballs is topped with the sauce below and baked.

You can use your hands to dig in or I like to use a potato masher to combine all the ingredients. 










When forming your meatballs, use a cookie scoop in order to get a uniform size.













Pull these meatballs from the freezer and put into a 9x13 baking dish and top with sauce.










Mom's Meatballs

3lb hamburger
1 c. oats
2 eggs
½ tsp. garlic powder
Dash pepper
1 12 oz. can evaporated milk
1 c. cracker crumbs
½ c. chopped onion
2 tsp. salt
2 tsp. chili powder

Combine all ingredients in a large bowl. Form into balls and place on aluminum foil-covered cookie sheet.  After frozen, place in Ziploc Freezer Bag.  (One recipe yields about 48 large meatballs. )

Use some of your frozen meatballs bake up with this sauce.

2 c. ketchup
½ tsp liquid smoke
½ tsp garlic powder
¼ c. chopped onion
1 c. brown sugar

Combine all ingredients and stir until sugar is dissolved. 
Place 24 frozen meatballs in 9x13 pan and pour sauce over the top.  Bake at 350º for 1 hour.
