1 pound Italian sausage, hot or mild as you prefer
1 cup chopped onion
2 cups grated cheese, pepper jack or Colby jack as you prefer
15 corn tortillas
In large skillet, brown sausage and onion, breaking up meat with back of spoon. Drain and place in 8x8 inch square or pie pan. Cover with cheese. Wrap in foil and place inside ziplock freezer bag. Label and freeze.
To serve: defrost and bake at 350 degrees for 15 to 20 minutes or until cheese is melted. Serve with warm tortillas, as well as sour cream and salsa on the side.
