Honey Gingered Tilapia with Mango Salsa

Marinade:
3 T honey
3 T soy sauce
3 T balsamic vinegar
1 tsp ground ginger
1 clove garlic

Mango Salsa:
Diced mango
Diced red pepper
Diced green chiles
Diced green onion
Salt/pepper to taste
Dash lime juice

To prepare:
Place tilapia fillets in bag & cover with marinade.  Place mango salsa in a separate bag.  Label & freeze.

To serve: 
Allow to thaw overnight so fish takes on flavor of marinade.  Pour fish and marinade into a pan drizzled with olive oil.  Cook on stovetop until flaky - about 5 minutes per side.  Remove fish from pan & reduce marinade until bubbly & slightly thickened.  Top fish with marinade & mango salsa.

    Anyhow, I have been freezer cooking since 1998, I LOVE it!! The way I fill my freezer has changed a bit since the early days I do a mix of fully prepared heat'n'eat meals, crock pot kits, side dishes, breakfasts, snacks, baked goods, "dump" meals, and SANe meals....

    Ty for posting the Honey Ginered Tilapia with Mango Salsa "dump" recipe. It is hard to find GOOD fish/seafood freezer meals, I mostly keep the fish filets unaltered in freezer ready to cook later. So I am looking forward to making this as I got a good deal on some Swai fish-it should be good with Swai too!
