Chicken Parmesan

1 package of chicken breasts
1 egg
Italian Bread Crumbs
Your favorite spaghetti sauce
Mozzarella Cheese

Beat egg in bowl and set aside. Pour bread crumbs in another bowl. Dip chicken breasts in egg, then in breadcrumbs and place in baking dish. Pour spaghetti sauce over chicken and top with mozzarella cheese.
Bake at 400 for about 30-45 minutes, till chicken is done.

Cracker Barrel Chicken Tenders

1 pound chicken breast tenders
1/2 cup Italian Dressing
1 tsp fresh lime juice
1 and 1/2 teaspoon honey


Mix dressing, lime juice and honey together. Pour over chicken tenders, making sure all tenders are covered; marinate for 1 hour or over night for better flavor. Braise tenders in a non-stick pan or grill to lightly golden in color but not dry.

Vegetable Beef Slow Cooker Stew

1 lb beef stew meat
2 medium peeled potatoes, cubed
1 14.5 oz can of beef broth
1 11.5 oz can of v8 juice
2 celery ribs, chopped
2 medium carrots, chopped
1 medium sweet onion, chopped
3 bay leaves
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp chili powder
1/4 tsp pepper
2 tbsp cornstarch
1 tbsp cold water
1/2 cup frozen corn
1/2 cup frozen peas

1. In a slow cooker, combine first 12 ingredients. Cover and cook on low for 7-8 hours or until meat is tender. Discard the bay leaves (DO NOT EAT THEM).
2. In a small bowl, combine the cornstarch and water and stir til smooth. Sometimes it takes me a few times to get this right! If you don't get the cornstarch mix right, the stew won't thicken.
3.Stir into stew. Add corn and peas.
4. Cover and cook on high for 20 minutes or until thickened.

Chicken Tortilla Soup

1 tsp olive oil
2 zucchinis, cubed
1 can of crushed tomatoes
6 cups chicken broth
1 cup fresh or frozen corn
1 cup fresh or frozen onion
1 cup fresh or frozen green bell pepper
1 cup fresh or frozen red bell pepper
1 cup fresh or frozen yellow bell pepper
(or buy the bag of green, red, and yellow peppers in the freezer aisle at Kroger)
1 can of black beans drained and rinsed
1 1/2 tsp cumin
1/2 tsp cayenne pepper
pre-cooked chicken, shredded (I put a 3-4 pack of breasts in the crock pot the night before)

Heat oil in stockpot. Add zucchini and saute for 2 minutes. Add crushed tomatoes, chicken broth, corn, peppers, onions, cumin, cayenne, and shredded chicken. Heat to a boil.
Serve with toppings you desire such as tortilla chips, lime, avocado slices, shredded cheese, cilantro, sour cream.
