Note: Each recipe makes about 1 1/2 deep 9 x 9" pans
2-3 chicken breasts, poached & shredded
1 dozen corn tortillas, cut into strips
1 lb cheddar cheese, shredded
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup milk
1/2 of a medium onion, diced
2 cans tomatoes with green chiles
In a large bowl, mix together soups, milk, onion, & tomatoes. Add shredded chicken & blend well. Layer ingredients in pan as follows: tortilla strips, sauce/chicken mixture, cheese - then repeat. Cover & freeze.
For best results, thaw before baking. Bake at 280 degrees for 1 hour. Cover if the cheese begins to get too brown on top. Serve with your favorite hot sauce.
